Ingredients:
1 fully cooked, bone-in ham (about 4-5 kg / 8-10 lbs)
1 cup brown sugar
½ cup Dijon mustard
½ cup honey
2 tablespoons apple cider vinegar
Cloves (optional, for studding the ham)
1 teaspoon Black Truffle Sauce
Instructions:
Preheat the oven: Preheat your oven to 160°C (325°F).
Prepare the ham: Place the ham in a large roasting pan. Score the surface of the ham in a diamond pattern. If you’re using cloves, insert them into the cross-points of the diamonds for extra flavor and presentation.
Make the glaze: In a bowl, combine the brown sugar, Dijon mustard, honey, and apple cider vinegar. Mix well to form a glaze.

Glaze the ham: Brush the ham generously with the glaze. Cover the ham loosely with aluminum foil to prevent it from drying out.
Roast the ham: Roast the ham in the preheated oven for about 1.5 to 2 hours (about 15-18 minutes per pound), basting it with more glaze every 30 minutes. Remove the foil during the last 30 minutes of roasting to allow the ham to caramelize.
Serve: Once the ham is fully roasted and caramelized, remove it from the oven and let it rest for 10-15 minutes before carving. Drizzle the Black Truffle Sauce over the sliced ham and garnish with fresh parsley.
