Ingredients:
1 whole turkey (about 4.5-5.5 kg / 10-12 lbs)
4 tablespoons Truffle & Spice seasoning (Great Southern Truffles)
4 tablespoons unsalted butter, softened
2 tablespoons olive oil
6 garlic cloves, minced
1 lemon, quartered
Fresh rosemary, thyme, and sage sprigs (optional, for stuffing the cavity)
Salt and pepper to taste
1 cup chicken or turkey broth (for basting)
Cooking twine (for trussing the turkey)
Instructions:
Preheat the oven: Preheat your oven to 180°C (350°F).
Prepare the turkey: Pat the turkey dry with paper towels to remove any excess moisture. Season the inside cavity of the turkey generously with salt and pepper. Stuff the cavity with the quartered lemon and fresh herbs like rosemary, thyme, and sage, if using.
Season the turkey: In a small bowl, mix the softened butter, Truffle & Spice seasoning, minced garlic, and olive oil to create a flavorful rub. Gently lift the skin of the turkey breast and rub half of the mixture directly under the skin. Rub the remaining mixture over the entire turkey, making sure to coat it evenly.
Truss the turkey: Tie the turkey legs together with cooking twine to ensure even cooking. Tuck the wing tips under the body of the turkey to prevent them from burning.
Roast the turkey: Place the turkey breast side up on a roasting rack in a large roasting pan. Pour the chicken or turkey broth into the bottom of the pan to keep the turkey moist while roasting. Roast the turkey in the preheated oven, basting every 30-40 minutes with the pan juices. Cook for about 3 to 3.5 hours, or until the internal temperature in the thickest part of the thigh reaches 75°C (165°F).
Rest the turkey: Once fully cooked, remove the turkey from the oven and tent it loosely with aluminum foil. Let the turkey rest for 20-30 minutes before carving to allow the juices to redistribute.
Serve: Carve the turkey and serve with your favorite sides, using the pan juices for extra flavor. You can also make a gravy with the drippings if desired.
