  • 2 cups cooked jasmine rice (preferably chilled)

  • 200g crab meat (cooked and shredded)

  • 1 bunch of asparagus, trimmed and sliced into bite-sized pieces

  • 1 carrot, peeled and diced

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 eggs, beaten

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon sesame oil

  • Salt and pepper to taste

  • 2 tablespoons vegetable oil

  • Fresh parsley, chopped, for garnish

  • Great Southern Truffles Black Truffle Foie Gras, sliced, for topping


  1. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.

  2. Once the oil is hot, add the beaten eggs and scramble them until fully cooked. Remove the scrambled eggs from the skillet and set aside.

  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.

  4. Add the diced carrots and sliced asparagus to the skillet. Cook for 3-4 minutes until they begin to soften slightly.

  5. Stir in the cooked crab meat and continue to cook for another 2-3 minutes until heated through.

  6. Add the chilled jasmine rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables and crab meat until everything is well combined.

  7. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the fried rice mixture and toss to coat evenly. Season with salt and pepper to taste.

  8. Stir in the scrambled eggs until evenly distributed throughout the fried rice.

  9. Transfer the fried rice to serving plates or a large serving dish. Sprinkle freshly chopped parsley over the top for garnish.

  10. Lastly, cut some pieces of Great Southern Truffles Black Truffle Foie Gras and arrange them on top of the fried rice.
