How are Australian black truffles preserved for year-round use?

As fresh Black Winter Truffles are only available between June - September, during the fresh truffle season, we make sure some of our fresh Black Winter truffles are jarred as soon as they have been hunted and graded, they are preserved so that they can be made available outside the fresh truffle season. Preserved truffle doesn't have the same aroma as fresh truffle so we recommend you use it in conjunction with our other truffle products. For example, for enhanced flavour, use shavings/slices of black winter truffle with our truffle oil or black truffle sauce.

How is truffle-infused olive oil made in Western Australia?

Great Southern Truffles truffle-infused olive oil is made with Jingilli extra virgin olive oil from their groves in Frankland River. This area provides an exceptional environment for producing premium extra virgin olive oil. The cool Mediterranean climate allows olives to ripen slowly and naturally, creating oils with rich flavour, high antioxidant levels, and remarkable complexity. The region’s pristine, pollution-free surroundings and distinctive loamy, ironstone-gravel soils provide ideal conditions for growing olives and producing high-quality, cold-pressed oil. Imported truffle-infused olive oli is often older by the time they reach Australia, as we typically receive what remains after domestic markets overseas have been supplied. In many cases, these oils are also refined. By contrast, Jingilli Extra Virgin Olive Oil is packaged within 24 hours of harvest, preserving its natural freshness, flavour, and nutritional benefits. Fresh black truffles are sourced from the Manjimup truffle region in Western Australia, infused into the cold-pressed extra virgin olive oil, allowing the rich, earthy flavors of the truffles to blend naturally with the oil.
