A comforting classic with gourmet flair


✨ Ingredients (Serves 4):


  • 300g elbow macaroni (or pasta of choice)

  • 2 tbsp unsalted butter

  • 2 tbsp plain flour

  • 2 cups whole milk (warm)

  • 1 cup grated sharp cheddar

  • 1/2 cup grated Gruyère or Parmesan

  • 1 tsp Great Southern Truffles Truffle Mustard (optional but recommended)

  • Salt and pepper to taste

  • A drizzle of Great Southern Truffles Truffle Infused Extra Virgin Olive Oil

  • Optional topping: toasted breadcrumbs or extra cheese


👩‍🍳 Method:


  1. Cook the pasta: Boil the pasta in salted water until just al dente. Drain and set aside.

  2. Make the roux: In a large saucepan over medium heat, melt the butter. Stir in the flour and whisk for 1–2 minutes to create a roux.

  3. Add milk and make the sauce: Slowly whisk in the warm milk. Stir continuously until the sauce thickens and is smooth (about 5 minutes).

  4. Add cheese and truffle: Lower the heat and stir in the cheddar, Gruyère, truffle butter, and truffle mustard until melted and creamy. Season with salt and pepper.

  5. Combine pasta and sauce: Add the cooked pasta to the sauce and stir until evenly coated.

  6. Finish and serve: Drizzle with Truffle Olive Oil just before serving. For extra crunch, top with toasted breadcrumbs or place under the grill for 3–5 minutes until golden.
